Ratatouille with white beans

As glad as we are about the weather turning warm, it's definitely no fun to be cooking in a hot kitchen during a heat wave. Which is why slow-cooked dishes are a smart dinner choice when the mercury rises. There's no reason to sweat over the stove when you can heap a helping of protein and veggies (which, OK, need some prep work) into the cooker and then return hours later, when it's ready to serve. To tempt your palate, here are five tasty recipes that are miles away from the heavy slow cooker dishes you enjoyed all winter long, and sure to become your new summer dinner staples.
